Recipe: (Paleo) Blood-Sugar-Balancing Banana Muffins
By now, if you have been following my work for quite some time you will know that I am not a fan of fad diets. However, I don't consider the "paleo" diet to be a fad diet. Why? Because it is simply based on eating a healthy combination of ALL macronutrients (protein, fat and carbohydrates) from clean, whole-food sources. This is at the foundation of everything I believe in for optimum health and for the body to be able to carry out its natural functions (ie; weight management, sleep, blood-sugar balance, hormone-balancing, etc.)

Serves 12
3 large eggs
5 mashed bananas
½ cup almond butter
¼ cup coconut oil
1 tsp vanilla
½ cup coconut flour
1 tbsp cinnamon
1 tsp baking powder
1 tsp baking soda
pinch of sea salt
Preheat oven to 350F. Line 12 muffin cups with liners. In a food processor or stand mixer, blend eggs, bananas, almond butter, coconut oil, and vanilla.
In a large bowl mix coconut flour, cinnamon, baking powder, baking soda, and salt.
Add blended wet ingredients to dry ingredients and stir until combined.Spoon batter into muffin tins, ¾ full. Bake for 15-18 minutes or until golden.
Serve & enjoy!
Tip: You can top muffins with walnuts before baking for an added boost of Vitamin B and essential fatty acids.
